Keto Carrot Cake Recipe
1 3/4 cup almond flour
3 tablespoon coconut flour
1/2 cup granulated sweetener
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
3 large eggs
6 tablespoon melted butter
1 tablespoon vanilla extract
1 tablespoon sugar free maple syrup
1 tablespoon lemon juice
Cream Cheese Icing (Mix all and blend)
4 ounces cream cheese
1 tablespoon sour cream
2 tablespoon powdered sweetener
1/2 teaspoon vanilla extract
-Preheat oven to 350°F
– Grate carrots or buy shredded ones at the grocery store
– Combine all dry ingredients in a bowl
– In a separate bowl combine all wet ingredients
– Combine both
– Add carrots and mix well
Place in oven for 30-35 minutes. Allow to cool and then add icing.
