Ingredients
-1 ½ cups almond flour
-½ cup powdered sweetener
-2 teaspoons baking powder
-1 teaspoon cinnamon
-5 tablespoons butter, softened
-1 teaspoon vanilla
-2 eggs
-½ cup half and half
For Cinnamon Sweet Topping
-4 tablespoons melted butter
-½ cup powdered sweetener
-2 teaspoons cinnamon
Instructions
-Preheat oven to 350. Grease muffin tin.
-In a bowl, beat butter, powdered sweetener, and vanilla together.
-Add eggs and half-and-half. Mix well and set aside.
-In a separate bowl mix dry ingredients together.
-Mix dry ingredients with wet ingredients and blend.
-Pour the batter into muffin tins.
-Bake 18 to 20 minutes.
-For topping, combine sweetener and cinnamon in a small bowl.
-Brush muffins with melted butter on all sides, place into the cinnamon sugar mixture, and roll to coat.
